Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • For the cream filling:
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.

  3. In a large bowl, cream together butter and granulated sugar until light and fluffy. Add egg and vanilla extract, mixing well.

  4. Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Mix until just combined.

  5. Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them 2 inches apart.

  6. Bake for 10-12 minutes or until the tops spring back when lightly touched.

  7. Remove from the oven and let cool completely on wire racks.

  8. In a separate bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until creamy.

  9. Spread a dollop of cream filling onto the flat side of half of the cookies, then top with the remaining cookies to form sandwiches.

  10. Serve and enjoy!
