Ingredients

  • 4 medium potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 4 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 large eggs

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the potatoes and onions, and cook until the potatoes are tender, about 10 minutes. Stir in the paprika, salt, and black pepper.

  3. In a medium bowl, whisk the eggs. Pour the eggs over the potato mixture in the skillet. Cook for 2 minutes without stirring, then transfer the skillet to the preheated oven.

  4. Bake for 15-20 minutes, or until the eggs are set and the top is golden brown.

  5. Remove from the oven and let it cool slightly before slicing into wedges. Serve warm.
