Ingredients

  • 4 cups of bitterleaf greens, washed and chopped
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of red onions, thinly sliced
  • 1/4 cup of feta cheese crumbles
  • 1/4 cup of sliced almonds
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the bitterleaf greens, cherry tomatoes, red onions, feta cheese, and sliced almonds.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to coat evenly.

  4. Serve immediately and enjoy!
