- 4 cups of bitterleaf greens, washed and chopped
- 1 cup of cherry tomatoes, halved
- 1/2 cup of red onions, thinly sliced
- 1/4 cup of feta cheese crumbles
- 1/4 cup of sliced almonds
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of balsamic vinegar
- Salt and pepper to taste
Instructions

In a large bowl, combine the bitterleaf greens, cherry tomatoes, red onions, feta cheese, and sliced almonds.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
