How To Make Vegan Pumpkin Soup
Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground ginger
- 1/4 tsp ground cinnamon
- 2 cups pumpkin puree
- 4 cups vegetable broth
- Salt and pepper to taste
- 1/4 cup coconut milk
- Pumpkin seeds, for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened, about 5 minutes.

Add the ground cumin, ground coriander, ground ginger, and ground cinnamon to the pot. Stir well to coat the onions and garlic in the spices.

Add the pumpkin puree and vegetable broth to the pot. Season with salt and pepper to taste. Bring to a simmer and let cook for 20 minutes.

Using an immersion blender or a regular blender, blend the soup until smooth and creamy.

Stir in the coconut milk to add a touch of creaminess.

Serve hot, garnished with pumpkin seeds.
