Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup of vegetable broth
  • 1 tbsp of smoked paprika
  • 1 tsp of dried oregano
  • 1 tbsp of olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat olive oil over medium heat. Add onions, garlic, and red pepper and cook until onions are translucent.

  3. Add chickpeas, vegetable broth, smoked paprika, oregano, salt, and pepper to the skillet. Stir and cook for 5-10 minutes.

  4. Transfer the mixture to a casserole dish and bake for 35-40 minutes.

  5. Serve hot and enjoy!
