How To Make Potato Leek Soup
A creamy and comforting soup made with potatoes and leeks.
Serves:
Ingredients
- 3 leeks, thinly sliced
- 4 potatoes, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper, to taste
Instructions

In a soup pot, melt the butter over medium heat. Add the leeks, onions and garlic, and cook until softened, about 5 minutes.

Add the potatoes and broth, and bring to a boil. Reduce heat and simmer for 25 minutes, or until the potatoes are tender.

Use an immersion blender or transfer the soup to a blender and blend until creamy.

Stir in the cream and season with salt and pepper to taste.

Serve hot, garnished with chopped leeks or chives.
