How To Make Potato Leek Soup

A creamy and comforting soup made with potatoes and leeks.

Serves:

Ingredients

  • 3 leeks, thinly sliced
  • 4 potatoes, peeled and diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper, to taste

Instructions

  1. In a soup pot, melt the butter over medium heat. Add the leeks, onions and garlic, and cook until softened, about 5 minutes.

  2. Add the potatoes and broth, and bring to a boil. Reduce heat and simmer for 25 minutes, or until the potatoes are tender.

  3. Use an immersion blender or transfer the soup to a blender and blend until creamy.

  4. Stir in the cream and season with salt and pepper to taste.

  5. Serve hot, garnished with chopped leeks or chives.
