A flavorful and aromatic dish that combines the goodness of ginger, turmeric, and chicken in a delicious curry.

Ingredients

  • 4 chicken breasts, cut into cubes
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp red chili flakes
  • 1 cup chicken broth
  • 1 can (14 oz) coconut milk
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a large pan, add chicken and cook for 5-7 minutes until browned.

  2. Remove chicken from pan and set aside. Add onion and garlic to the same pan and cook for 5 minutes until softened.

  3. Add ginger, turmeric, cumin, coriander, and chili flakes. Cook for 1-2 minutes until fragrant.

  4. Add chicken broth, coconut milk, tomato paste, and stir well.

  5. Return chicken to the pan, reduce heat to low, and simmer for 15-20 minutes until chicken is cooked through and the sauce has thickened.

  6. Garnish with fresh cilantro and serve over rice.
