Ingredients

  • 8 slices of bread
  • 1 cup of tofu (blended into a smooth paste)
  • 1/4 cup of yogurt
  • 1 tablespoon of mustard
  • 1 tablespoon of vinegar
  • 1 teaspoon of sugar
  • Salt and pepper to taste
  • Lettuce leaves
  • Tomato slices
  • Cucumber slices
  • Onion slices
  • Cheese slices (optional)

Instructions

  1. In a bowl, mix together the tofu paste, yogurt, mustard, vinegar, sugar, salt, and pepper.

  2. Spread the mixture onto one side of each bread slice.

  3. Layer lettuce leaves, tomato slices, cucumber slices, onion slices, and cheese (if desired) onto half of the bread slices.

  4. Cover with the remaining bread slices, mayonnaise side down.

  5. Cut the sandwiches into desired shapes and serve.
