Instructions

  1. In a dry skillet, toast the cumin seeds over medium heat for 1-2 minutes until fragrant. Remove from heat and let cool.

  2. In a large bowl, combine the grated carrots, toasted cumin seeds, olive oil, lemon juice, salt, and pepper. Mix well to combine.

  3. Garnish with fresh cilantro before serving.
