How To Make Butternut Squash Soup Recipe

Ingredients
- 1 medium-sized butternut squash, peeled and chopped
- 1 large onion, chopped
- 2 garlic cloves, minced
- 4 cups of chicken or vegetable broth
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/2 cup of heavy cream
- Salt and pepper, to taste
- 2 tablespoons of olive oil
Instructions

Heat the olive oil in a large soup pot over medium heat.

Add the onion and sauté until it becomes translucent.

Add the garlic and sauté for another minute.

Add the butternut squash, broth, cinnamon, and nutmeg to the pot.

Bring everything to a boil, then reduce heat and let it simmer for 20-25 minutes or until the butternut squash is tender.

Using an immersion blender, puree the soup until it’s smooth.
