Ingredients

  • 2 medium-sized beetroots, boiled and peeled
  • 1 cup plain Greek yogurt
  • 1/4 cup chopped fresh mint leaves
  • 2 cloves of garlic
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a food processor, add the boiled and peeled beetroots, Greek yogurt, chopped mint leaves, garlic cloves, lemon juice, salt, and pepper.

  2. Blend until smooth and creamy.

  3. Adjust the seasoning according to taste.

  4. Transfer to a serving bowl.

  5. Garnish with a sprig of fresh mint.

  6. Serve with pita bread, vegetable sticks, or crackers.
