  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 8 mini peppermint patties, chopped


  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.

  2. In a microwave-safe bowl, melt the butter. Stir in the sugar until well combined.

  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. In a separate bowl, whisk together the cocoa powder, flour, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Fold in the chopped peppermint patties, reserving a few for topping.

  6. Pour the batter into the prepared baking pan and smooth the top with a spatula. Sprinkle the reserved chopped peppermint patties on top.

  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

  8. Allow the brownies to cool completely before cutting into squares.
