Serves:
Ingredients
- 2 cups self-rising flour
- 1/4 cup sugar
- 1/2 cup cold butter, cubed
- 1/2 cup milk
- 1/2 cup vanilla ice cream, melted
- 1/2 cup chocolate chips
Instructions
-
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
-
In a large mixing bowl, combine the self-rising flour and sugar. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
-
Add the milk and melted vanilla ice cream to the bowl. Stir until just combined.
-
Turn the dough out onto a lightly floured surface and knead it gently a few times until it comes together. Do not overmix.
-
Pat the dough into a circle, about 1-inch thick. Use a round cookie cutter or a glass to cut out scones from the dough. Place the scones onto the prepared baking sheet.
-
Sprinkle the chocolate chips over the scones, pressing them gently into the dough.
-
Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown.
-
Remove from the oven and let the scones cool on a wire rack before serving.
