  • 1 ½ cups of desiccated coconut
  • ½ cup of condensed milk
  • 3 limes, zested and juiced
  • 1 cup of mixed summer fruits (such as berries, kiwi, and mango), diced
  • ¼ cup of shredded coconut
  • Fresh mint leaves for garnish

Instructions

  1. In a large bowl, mix desiccated coconut, condensed milk, lime zest, and lime juice until well combined.

  2. Press the mixture into a lined square baking dish, spreading it evenly.

  3. Freeze for 2 hours or until firm.

  4. In the meantime, prepare the mixed summer fruits by dicing them into small pieces.

  5. Once the coconut base is firm, remove from the freezer and slice into squares or rectangles.

  6. Dip each slice into shredded coconut, coating all sides.

  7. Serve the iced coconut and lime slices on a platter, garnished with the mixed summer fruits and fresh mint leaves.
