  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy.

  4. Mix in the lemon zest, lemon juice, and vanilla extract.

  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

  6. Roll the dough into 1-inch balls and roll them in the powdered sugar to coat.

  7. Place the coated dough balls onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

  8. Bake for 10-12 minutes or until the edges are set and slightly golden.

  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
