  • 1 cup of shredded coconut
  • 1 cup of all-purpose flour
  • 1/2 cup of butter, softened
  • 1/2 cup of granulated sugar
  • 1/4 cup of brown sugar
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together the shredded coconut, flour, and cinnamon.

  3. In a separate bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract.

  4. Gradually add the dry ingredients to the butter mixture and mix until well combined.

  5. Roll the dough into small balls and place them onto the prepared baking sheet.

  6. Using the back of a spoon, press down on each ball to flatten it slightly.

  7. Bake in the preheated oven for 12 minutes, or until the edges are golden brown.

  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
