  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsp granulated sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  3. Mix in the eggs one at a time, followed by the vanilla extract.

  4. In a separate bowl, whisk together the flour, ground cinnamon, baking soda, and salt.

  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

  6. Roll the dough into 1-inch balls, then roll each ball in the granulated sugar.

  7. Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

  8. Bake for 12-14 minutes, or until the edges are golden brown.

  9. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
