How To Make Cinnamon Roll Cookies
These cookies have the same flavor as cinnamon rolls but in a bite-size cookie form.
Serves:
Ingredients
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbsp ground cinnamon
- For the icing:
- 1 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
-
Preheat oven to 350°F and line a baking sheet with parchment paper.
-
In a mixing bowl, cream the butter, granulated sugar, brown sugar, egg, and vanilla extract until light and creamy.
-
In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon. Gradually add this to the wet ingredients and mix until just combined.
-
Using a cookie scoop or spoon, form 1-2 inch balls of dough and place them onto the prepared baking sheet.
-
Bake for 10-12 minutes until lightly golden on the edges.
-
While the cookies cool, whisk together the powdered sugar, milk, and vanilla extract to make the icing.
-
Once the cookies have cooled, drizzle the icing over them and let them set before serving.
