How To Make Big Soft Ginger Cookies

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 tablespoons granulated sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.

  3. In a large mixing bowl, cream together the butter and 1 cup of granulated sugar until light and fluffy. Beat in the egg and molasses.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Roll dough into 1 1/2 inch balls, then roll each ball in the remaining 2 tablespoons of granulated sugar.

  6. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

  7. Bake for 10-12 minutes, or until puffed and cracked on top.

  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
