How To Make White Chocolate Raspberry Cheesecake

Ingredients
- 200g white chocolate, chopped
- 250g cream cheese
- 100g sugar
- 1 tsp vanilla extract
- 2 eggs
- 150g fresh raspberries
- 200g graham cracker crumbs
- 100g unsalted butter, melted
Instructions

Preheat the oven to 325°F (162°C).

In a microwave-safe bowl, melt the white chocolate in 30-second intervals until smooth. Let it cool slightly.

In a separate mixing bowl, beat together the cream cheese, sugar, and vanilla extract until creamy.

Gradually add the melted white chocolate into the cream cheese mixture and mix until well combined.

Add the eggs, one at a time, mixing well after each addition.

Gently fold in the fresh raspberries.

In a separate bowl, mix the graham cracker crumbs and melted butter until evenly combined.

Press the graham cracker mixture into the bottom of a 9-inch (23cm) springform pan to form the crust.

Pour the cheesecake mixture over the crust and spread it evenly.

Bake in the preheated oven for 50-60 minutes or until the edges are set and the center is slightly jiggly.

Remove from the oven and let it cool completely. Then refrigerate for at least 4 hours or overnight.

Once chilled, carefully remove the sides of the springform pan.

Serve chilled and garnish with additional raspberries, if desired.
