Ingredients

  • 2 Somerset Pomona apples, peeled, cored, and thinly sliced
  • 1 1/2 cups almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 eggs, beaten
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a large bowl, combine the almond flour, all-purpose flour, sugar, baking powder, and salt. Mix well.

  3. In a separate bowl, whisk together the melted butter, beaten eggs, and vanilla extract.

  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

  5. Pour half of the batter into the prepared cake pan. Layer half of the sliced apples on top. Repeat with the remaining batter and sliced apples.

  6. Sprinkle the sliced almonds on top of the cake.

  7. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
