Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped dried mixed fruits (such as cherries, apricots, and raisins)
  • for the frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Gradually add the flour mixture to the butter mixture, alternating with the milk. Begin and end with the flour mixture, mixing just until combined.

  5. Fold in the chopped walnuts and dried mixed fruits.

  6. Divide the batter evenly between the prepared pans and smooth the tops with a spatula.

  7. Bake for 25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  8. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them onto a wire rack to cool completely.

  9. To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract, beating until smooth and fluffy.

  10. Once the cakes have cooled, place one cake layer on a serving plate. Spread a generous amount of frosting on top. Add the second layer and frost the top and sides of the cake.

  11. Garnish with chopped walnuts.

  12. Slice and serve the delicious Lady Baltimore Cake.
