Ingredients

  • 1 cup basmati rice
  • 1 onion, sliced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Rinse the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

  2. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.

  3. Add sliced onions, minced garlic, and grated ginger. Sauté until the onions turn golden brown.

  4. Add diced carrots, bell peppers, and frozen peas. Cook for 3-4 minutes until the vegetables soften.

  5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.

  6. Add the soaked and drained rice to the pan. Stir gently to combine with the vegetables and spices.

  7. Add 2 cups of water and bring to a boil. Reduce heat to low, cover the pan, and simmer for about 15-20 minutes or until the rice is cooked and fluffy.

  8. Remove from heat and let it sit for 5 minutes. Fluff the rice with a fork.

  9. Garnish with fresh coriander leaves and serve hot.
