How To Make Trio’s Mediterranean Pasta Recipe

Ingredients

  • 8 oz penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Cook pasta according to package instructions.

  2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, and Kalamata olives.

  3. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.

  4. Pour dressing over pasta and vegetables. Toss to combine.

  5. Sprinkle feta cheese on top.

  6. Serve immediately and enjoy.
