How To Make Kermit’s Chicken and Sausage Gumbo
A spicy and flavorful Cajun stew with juicy chicken, savory sausage, and a rich roux base.
Serves:
Ingredients
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 large onion, diced
- 2 green bell peppers, diced
- 3 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 lb smoked sausage, sliced
- 2 bay leaves
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Cooked rice for serving
Instructions
-
In a large Dutch oven or pot, heat the oil over medium-high heat. Once hot, sprinkle the flour on top and whisk together continuously for 20-30 minutes, or until the flour mixture turns a dark brown color (this is called a roux).
-
Add the onion, bell pepper, celery, and garlic, and cook for another 5-7 minutes or until the veggies are soft.
-
Pour in the chicken broth and stir well. Add the chicken, sausage, bay leaves, paprika, thyme, oregano, cayenne pepper, salt, and pepper, and stir to combine.
-
Bring everything to a boil, then reduce the heat to low and let simmer for 1 hour, stirring occasionally.
-
Taste and adjust seasoning as needed. Serve hot over cooked rice.
