Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion, diced
  • 2 green bell peppers, diced
  • 3 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 lb smoked sausage, sliced
  • 2 bay leaves
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a large Dutch oven or pot, heat the oil over medium-high heat. Once hot, sprinkle the flour on top and whisk together continuously for 20-30 minutes, or until the flour mixture turns a dark brown color (this is called a roux).

  2. Add the onion, bell pepper, celery, and garlic, and cook for another 5-7 minutes or until the veggies are soft.

  3. Pour in the chicken broth and stir well. Add the chicken, sausage, bay leaves, paprika, thyme, oregano, cayenne pepper, salt, and pepper, and stir to combine.

  4. Bring everything to a boil, then reduce the heat to low and let simmer for 1 hour, stirring occasionally.

  5. Taste and adjust seasoning as needed. Serve hot over cooked rice.
