Ingredients

  • 1/4 cup olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 eggplant, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 4 roma tomatoes, diced
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary leaves
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté until tender.

  3. Add eggplant, zucchini, and bell peppers. Cook until vegetables are tender.

  4. Add tomatoes, thyme, and rosemary. Season with salt and pepper and cook for a few minutes, until the tomatoes start to break down.

  5. Transfer the mixture to a baking dish and bake for 30 to 40 minutes, until the vegetables are golden brown and tender.

  6. Serve with crusty bread or over a bed of rice.
