How To Make Eldon’s Mushroom Risotto Recipe
Creamy risotto mixed with flavorful mushrooms, perfect for a hearty dinner.
Serves:
Ingredients
- 1 ½ cups of Arborio rice
- 4 cups of chicken broth
- 1 cup of white wine
- 1 cup of sliced mushrooms
- ½ onion, diced
- 3 cloves of garlic, minced
- 2 tbsp of butter
- 2 tbsp of olive oil
- ½ cup of grated parmesan cheese
- Salt and pepper to taste
Instructions

In a large saucepan, heat the chicken broth and keep it simmering over low heat.

In a separate pot, sauté the onions and garlic in olive oil until the onions are translucent.

Add the Arborio rice to the pot and stir constantly for 2-3 minutes.

Pour in the white wine and simmer until it evaporates.

Gradually add the warm chicken broth, about 1 cup at a time, and stir constantly until the broth is absorbed before adding more.

After 15 minutes, add the mushrooms.

Continue to stir and add broth until the rice is cooked and creamy.

Remove from heat and stir in the butter and parmesan cheese.

Season with salt and pepper to taste.
