Ingredients

  • 2 ripe bananas
  • 1/2 cup rolled oats
  • 2 scoops vanilla protein powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 egg whites
  • 1/2 cup unsweetened almond milk
  • 1/4 cup unsweetened applesauce

Instructions

  1. Preheat oven to 350°F and line a 12-cup muffin tin with paper liners.

  2. In a large bowl, mash the bananas until smooth.

  3. Add in the rolled oats, protein powder, baking powder, baking soda, cinnamon, and salt. Mix well.

  4. In a separate bowl, whisk together the egg whites, almond milk, and applesauce.

  5. Pour the wet ingredients into the dry ingredients and stir until fully combined.

  6. Using a 1/4 cup measuring cup, divide the batter evenly among the muffin cups.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  8. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
