  • 4 boneless, skinless chicken breasts
  • 1/2 cup shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1 tsp lime zest
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a shallow dish, combine the shredded coconut, panko breadcrumbs, lime zest, garlic powder, paprika, salt, and black pepper.

  3. Dip each chicken breast into the beaten eggs, then coat it evenly with the coconut mixture, pressing gently to adhere.

  4. Place the coated chicken breasts onto the prepared baking sheet and lightly spray them with cooking spray.

  5. Bake for 18-20 minutes, or until the chicken is cooked through and the coating is golden and crispy.

  6. Remove from the oven and let the chicken rest for a few minutes before serving. Enjoy!
