Serves:
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 2 eggs
- 2 tablespoons melted butter
- Additional butter or oil for cooking
Instructions
-
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
-
In a separate bowl, whisk together the buttermilk, eggs, and melted butter.
-
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix, it’s okay if there are a few lumps.
-
Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to the pan.
-
Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, until golden brown.
-
Repeat with the remaining batter, adding more butter or oil to the pan as needed.
-
Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
