How To Make Green Bell Pepper and Lentil Soup Recipe

A healthy and hearty soup made with lentils and flavorful green bell peppers.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 green bell peppers, chopped
  • 1 cup dried lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 tsp cumin powder
  • 1/2 tsp chili powder
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic, sauté for 5 minutes.

  3. Add green bell peppers, and cook for another 5 minutes.

  4. Add lentils, vegetable broth, cumin powder, chili powder, salt, and pepper.

  5. Bring the soup to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender.

  6. Blend the soup with an immersion blender until smooth.

  7. Serve hot with a slice of bread.
