How To Make Green Bell Pepper and Black Bean Enchiladas Recipe

Vegetarian enchiladas topped with homemade green chili sauce.

Serves:

Ingredients

  • 2 bell peppers, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 8 flour tortillas
  • 2 cups green chili sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet, sauté bell peppers, onions, and garlic until softened.

  3. Add black beans, cumin, salt, and pepper. Cook for an additional 5 minutes.

  4. Spoon bean mixture into each tortilla and roll up, placing seam side down in a baking dish.

  5. Pour green chili sauce over enchiladas and sprinkle with cheese.

  6. Cover with foil and bake for 20 minutes.

  7. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
