Serves:

Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 potatoes, peeled and diced
  • 2 celery stalks, sliced
  • 4 cloves of garlic, minced
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups beef broth
  • 2 cups water
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the beef stew meat and brown on all sides. Remove from the pot and set aside.

  2. In the same pot, add the onion, carrots, potatoes, celery, and garlic. Cook for 5 minutes, until the vegetables start to soften.

  3. Return the beef stew meat to the pot. Add the bay leaves, dried thyme, dried rosemary, beef broth, and water. Season with salt and pepper.

  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 1.5 hours. Stir occasionally.

  5. Remove the bay leaves and adjust the seasoning if needed.

  6. Let the hotpot cool completely, then divide it into individual serving containers. Label and refrigerate for up to 3 days or freeze for up to 3 months.

  7. To serve, simply reheat the hotpot on the stovetop or in the microwave until heated through.
