Ingredients

  • 1 lb lean ground turkey
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup tomato paste
  • 1/4 cup red wine (optional)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 4 cups cooked whole wheat spaghetti

Instructions

  1. In a large pan, cook the ground turkey over medium heat until browned. Remove from pan and set aside.

  2. In the same pan, sauté the onion, carrots, celery, and garlic until softened.

  3. Add the cooked ground turkey back to the pan and stir in the crushed tomatoes, tomato paste, red wine (if using), dried oregano, dried basil, salt, and black pepper. Simmer for 20 minutes, stirring occasionally.

  4. Stir in the Parmesan cheese until melted and well combined.

  5. Serve the bolognese sauce over cooked whole wheat spaghetti.
