Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/2 cup buttermilk
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped fresh parsley
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the cornmeal, flour, baking powder, salt, black pepper, and paprika.

  2. In a separate bowl, whisk together the buttermilk, diced onion, diced bell pepper, and chopped parsley.

  3. Pour the wet ingredients into the dry ingredients and mix until well combined.

  4. In a deep skillet or Dutch oven, heat about 2 inches of vegetable oil over medium-high heat.

  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, turning occasionally.

  6. Remove the hush puppies from the oil and drain on paper towels.

  7. Serve hot and enjoy!
