Ingredients

  • 1 (5-6 lb) goose
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 cup cranberries
  • 1/4 cup orange juice
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the slow cooker on low heat.

  2. Pat the goose dry with paper towels and season with salt, pepper, rosemary, and thyme.

  3. Place the goose in the slow cooker and cook on low heat for 4 hours.

  4. While the goose is cooking, prepare the cranberry salsa by combining cranberries, orange juice, honey, and balsamic vinegar in a saucepan. Bring to a simmer and cook for 5 minutes until the cranberries burst and thicken.

  5. Remove the goose from the slow cooker and let rest for 10 minutes.

  6. Serve the slow-cooked goose with the cranberry salsa and garnish with fresh parsley.
