How To Make Roast turkey with citrus butter

Ingredients
- 1 whole turkey (10-12 lbs)
- 1/2 cup unsalted butter, softened
- Zest of 2 oranges
- Zest of 1 lemon
- Juice of 1 orange
- Juice of 1 lemon
- 2 cloves of garlic, minced
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
Instructions

Preheat the oven to 325°F (165°C).

In a mixing bowl, combine the softened butter, orange zest, lemon zest, orange juice, lemon juice, minced garlic, chopped thyme, salt, and pepper. Mix well to make the citrus butter.

Rinse the turkey under cold water and pat it dry with paper towels. Place it on a roasting rack in a roasting pan.

Gently loosen the skin of the turkey by sliding your hand under the skin. Be careful not to tear the skin.

Spread half of the citrus butter evenly under the skin of the turkey, covering the breast and thighs.

Rub the remaining citrus butter all over the outside of the turkey.

Season the turkey with salt and pepper.

Insert a meat thermometer into the thickest part of the thigh, without touching the bone.

Roast the turkey in the preheated oven for about 15 minutes per pound, or until the thermometer reads 165°F (74°C).

Baste the turkey with the pan drippings every 30 minutes.

Once the turkey is cooked, remove it from the oven and let it rest for 20 minutes before carving.
