  • 1 butternut squash, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp nigella seeds
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.

  2. Add the diced squash, nigella seeds, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes or until the squash is tender.
