Ingredients

  • 1.5 lbs pork loin, cut into 1-inch cubes
  • 1 orange, zested and juiced
  • 1 cup pitted green olives
  • 2 bay leaves
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the pork cubes and brown them on all sides. Remove from the pot and set aside.

  2. In the same pot, add the onions and garlic. Sauté until fragrant and translucent.

  3. Add the pork back to the pot along with the bay leaves, thyme, and oregano. Season with salt and pepper. Stir well to combine.

  4. Pour in the orange juice and zest. Bring to a simmer and cover the pot. Let it cook for 30 minutes, stirring occasionally.

  5. Add the green olives and continue cooking for another 5 minutes, or until the pork is cooked through and tender.

  6. Remove the bay leaves before serving. Serve hot and enjoy!
