How To Make Elote Salad

Ingredients

  • 4 ears of corn, husked
  • 2 tbsp olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 1 lime
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled cotija cheese
  • 1 ripe avocado, diced

Instructions

  1. Preheat grill to medium-high heat. Brush corn with olive oil and grill for about 10-12 minutes, turning occasionally, until kernels are slightly charred. Remove from grill and let cool slightly.

  2. In a small bowl, combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper. Stir until well mixed.

  3. Cut kernels off the grilled corn and place them in a large bowl. Add cherry tomatoes, red onion, cilantro, cotija cheese, and avocado.

  4. Pour the dressing over the corn mixture and toss gently until all ingredients are well coated.

  5. Serve immediately or refrigerate until ready to serve.
