Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, parsley, and mint.

  2. In a small bowl, whisk together lemon juice, olive oil, cumin, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Refrigerate for at least 30 minutes to allow the flavors to meld.

  5. Serve chilled and enjoy!
