How To Make Tandoori Roast Guinea Fowl

Ingredients

  • 1 whole guinea fowl
  • 1 cup plain yogurt
  • 2 tbsp tandoori masala
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt, to taste
  • Juice of 1 lemon
  • 2 tbsp oil
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix together yogurt, tandoori masala, ginger paste, garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, salt, lemon juice, and oil.

  3. Make deep incisions in the guinea fowl and apply the marinade all over, including inside the incisions.

  4. Allow the guinea fowl to marinate for about 30 minutes.

  5. Place the guinea fowl on a wire rack in a roasting pan. Pour any remaining marinade over the fowl.

  6. Roast in the preheated oven for 40 minutes or until the guinea fowl is cooked through and the skin is crispy.

  7. Remove from the oven and let it rest for a few minutes before carving.

  8. Garnish with fresh cilantro and serve hot.
