How To Make Loaded Cauliflower Squares

Creamy, savory, & healthy, these cauliflower squares are filled with bacon, spinach, mozzarella, and eggs to make a great side dish that everyone will love.

Ingredients

  • 4cupscauliflower rice
  • 9slicesbacon,chopped
  • 2cupsmozzarella cheese
  • 2cupsfresh spinach
  • 2largeeggs

Instructions

  1. Microwave the cauliflower for 3 to 5 minutes. Drain excess liquid.

  2. Mix together the cauliflower rice, bacon, mozzarella, spinach, and eggs.

  3. Place on a parchment paper-lined baking sheet and form a large rectangle.

  4. Bake at 400 degrees F until golden brown.

  5. Cut into 6 servings.

  6. Enjoy!
