Ingredients

  • 2 cans (400g each) chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 3 cloves of garlic
  • 1 cup fresh parsley
  • 1 cup fresh cilantro
  • 2 tablespoons flour
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, flour, cumin, coriander, salt, black pepper, and cayenne pepper. Pulse until well combined but still slightly chunky.

  3. Shape the mixture into 16 small balls or patties and place them on the prepared baking sheet.

  4. Brush the falafel with olive oil and bake for 20-25 minutes, or until golden brown and crispy.

  5. Serve the baked falafel with pita bread, tahini sauce, and your favorite toppings.
