How To Make One-pan Lamb & Couscous

Ingredients

  • 1 lb lamb shoulder, cubed
  • 1 cup couscous
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add lamb and cook until browned on all sides.

  2. Add onion, garlic, bell pepper, and zucchini to the skillet. Cook until vegetables are softened.

  3. Stir in cumin, paprika, cinnamon, salt, and pepper. Cook for an additional 2 minutes.

  4. Add couscous to the skillet and stir to combine with the lamb and vegetables.

  5. Pour in 2 cups of water and bring to a boil. Reduce heat to low, cover, and let simmer for 10-15 minutes, or until couscous is tender and has absorbed the liquid.

  6. Remove from heat and let rest for 5 minutes before fluffing with a fork.

  7. Garnish with fresh parsley before serving.
