
How To Make Vegan Sweet Potato Chili Recipe
Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 medium sweet potatoes, peeled and diced
- 1 bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained and rinsed
- 2 cups vegetable broth
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.

Add the diced sweet potatoes and bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.

Add the diced tomatoes, black beans, kidney beans, corn, vegetable broth, chili powder, cumin, paprika, salt, and pepper to the pot. Stir to combine.

Bring the chili to a simmer, then reduce the heat to low. Cover and cook for 30 minutes, or until the sweet potatoes are tender.

Taste and adjust the seasoning as needed. Serve the chili hot, garnished with fresh cilantro.
