Delicious and buttery vanilla shortbread cookies dusted with sweet sugar crystals.
Serves:
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1/4 cup granulated sugar, for dusting
Instructions
-
In a mixing bowl, cream together the softened butter, powdered sugar, and vanilla extract until light and fluffy.
-
Add in the flour and salt, mixing until just combined.
-
Shape the dough into a disk and wrap it in plastic wrap. Chill in the refrigerator for at least 1 hour.
-
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
-
On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use a cookie cutter to cut out desired shapes.
-
Place the cookies on the prepared baking sheet, spaced apart. Sprinkle the tops with granulated sugar.
-
Bake for 10-12 minutes, or until the edges of the cookies are lightly golden.
-
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
