Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup granulated sugar, for dusting

Instructions

  1. In a mixing bowl, cream together the softened butter, powdered sugar, and vanilla extract until light and fluffy.

  2. Add in the flour and salt, mixing until just combined.

  3. Shape the dough into a disk and wrap it in plastic wrap. Chill in the refrigerator for at least 1 hour.

  4. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  5. On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use a cookie cutter to cut out desired shapes.

  6. Place the cookies on the prepared baking sheet, spaced apart. Sprinkle the tops with granulated sugar.

  7. Bake for 10-12 minutes, or until the edges of the cookies are lightly golden.

  8. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
