How To Make Doughnut Muffins
These doughnut muffins are a delicious and portable treat that combine the best of both worlds. They have the fluffy and tender texture of a muffin, with the irresistible sweetness and glaze of a doughnut.
Serves:
Ingredients
- 1 and 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/4 cup plain Greek yogurt
- 1/4 cup powdered sugar (for dusting)
- Vegetable oil (for frying)
Instructions
-
Preheat the oven to 375°F (190°C) and grease a muffin tin.
-
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
-
In a separate bowl, combine the milk, melted butter, vanilla extract, and Greek yogurt.
-
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
-
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
-
Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
-
While the muffins are baking, heat vegetable oil in a deep skillet or pot until it reaches 350°F (175°C).
-
Carefully remove the muffins from the tin and place them on a wire rack to cool slightly.
-
One at a time, dip each muffin into the hot oil and fry for about 30 seconds on each side, or until golden brown.
-
Remove the muffins from the oil and drain on a paper towel-lined plate.
-
Dust the warm muffins with powdered sugar.
-
Serve the doughnut muffins warm or at room temperature.
