Serves:

Ingredients

  • 2 cups of heavy cream
  • 1 cup of whole milk
  • 3/4 cup of granulated sugar
  • 4 egg yolks
  • 1 teaspoon of vanilla extract

Instructions

  1. In a medium saucepan, heat the heavy cream, whole milk, and granulated sugar over medium heat until it starts to steam, but not boil.

  2. In a separate bowl, whisk the egg yolks until they become pale in color.

  3. Slowly pour the hot cream mixture into the egg yolks while continuously whisking.

  4. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon. This should take about 5-7 minutes.

  5. Remove from heat and stir in the vanilla extract.

  6. Let the mixture cool completely, then cover and refrigerate for at least 4 hours or overnight.

  7. Once chilled, transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions.

  8. Transfer the churned ice cream to a lidded container and freeze for an additional 2-4 hours to firm up.

  9. Serve and enjoy the creamy and delicious ice cream base on its own or add your favorite mix-ins and flavors!
