How To Make Caramel & Coffee Ice Cream Sandwich

Ingredients
- 2 cups of all-purpose flour
- 1/2 cup of sugar
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 1/2 cup of unsalted butter, melted
- 1/4 cup of caramel sauce
- 2 tbsp of instant coffee, dissolved in 1/4 cup of hot water
- 2 cups of coffee ice cream
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the flour, sugar, baking soda, and salt.

Add the melted butter, caramel sauce, and dissolved coffee to the dry ingredients. Mix well until a dough forms.

On a floured surface, roll out the dough to about 1/4 inch thickness. Use a round cookie cutter to cut out circles of dough and place them onto the prepared baking sheet.

Bake for 10 minutes, or until the edges are golden brown. Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Once the cookies are completely cooled, scoop a generous amount of coffee ice cream onto the bottom side of one cookie. Place another cookie on top to create a sandwich. Repeat with the remaining cookies and ice cream.

Serve immediately or place the ice cream sandwiches in the freezer for a few hours to harden before serving.
